Zucchini is best harvested when it is about 8 inches long. You’ll know it’s gone too far if the skin gets hard and it sounds hollow when you tap on it. If you cut into it and the seeds inside are hard, it’s over-ripe. Cut the stem with a clean knife and keep in an open bag or cracked container in the refrigerator until use.
